{"id":3760,"date":"2020-11-10T08:00:00","date_gmt":"2020-11-10T07:00:00","guid":{"rendered":"https:\/\/saumonecossais.com\/fr\/?p=3760"},"modified":"2024-06-03T10:13:05","modified_gmt":"2024-06-03T08:13:05","slug":"paris-brest-a-la-creme-davocat-fromage-frais-et-saumon-ecossais-label-rouge","status":"publish","type":"post","link":"https:\/\/saumonecossais.com\/fr\/paris-brest-a-la-creme-davocat-fromage-frais-et-saumon-ecossais-label-rouge\/","title":{"rendered":"Paris-Brest \u00e0 la cr\u00e8me d\u2019avocat, fromage frais et saumon \u00e9cossais Label Rouge par @Stephatable"},"content":{"rendered":"\n<p>Cuisson&nbsp;: 20 minutes \/ Pr\u00e9paration&nbsp;: 35 minutes \/ Pour 2 personnes<\/p>\n\n\n\n<h2 class=\"article-blog ingredients wp-block-heading\">Ingr\u00e9dients<\/h2>\n\n\n\n<p>P\u00e2te \u00e0 chou\u00a0:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>60 ml d\u2019eau<\/li><li>60 g de beurre<\/li><li>60 g de lait d\u2019avoine<\/li><li>Une pinc\u00e9e de sel<\/li><li>70 g farine\u00a0<\/li><li>2 gros \u0153ufs \u00a0<\/li><li>60 g d\u2019amandes effil\u00e9es<\/li><\/ul>\n\n\n\n<p>Farce fromage frais &amp; saumon :<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>250 g de saumon \u00e9cossais Label Rouge\u00a0frais<\/li><li>Une demi botte d\u2019aneth<\/li><li>200 g de fromage frais<\/li><li>Une pinc\u00e9e de baies roses<\/li><\/ul>\n\n\n\n<p>Topping saumon :<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>120 g de saumon \u00e9cossais Label Rouge\u00a0frais<\/li><li>Un jus de citron jaune<\/li><li>1 cuill\u00e8re \u00e0 soupe de sauce ponzu aux agrumes<\/li><\/ul>\n\n\n\n<p>Cr\u00e8me d\u2019avocat :<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 gros avocat<\/li><li>Une demi \u00e9chalote<\/li><li>Un demi jus de citron jaune<\/li><li>Un filet d\u2019huile d\u2019olive<\/li><li>Fleur de sel et poivre du moulin&nbsp;<\/li><\/ul>\n\n\n\n<h2 class=\"article-blog recette wp-block-heading\">Recette<\/h2>\n\n\n\n<p>Pour deux Paris-Brest de 20 centim\u00e8tres :<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Pr\u00e9chauffez le four \u00e0 190\u00b0C.<\/li><li>D\u00e9posez dans une casserole, l&rsquo;eau, le lait, la pinc\u00e9e de sel, le beurre.<\/li><li>Faites bouillir le tout et versez d&rsquo;un seul coup toute la farine tamis\u00e9e.<\/li><li>Remuez bien \u00e0 la spatule et travaillez-la environ 5 minutes \u00e0 feu doux jusqu&rsquo;\u00e0 ce que la p\u00e2te se d\u00e9colle des parois et forme une boule.<\/li><li>Retirez du feu et laissez refroidir quelques minutes.<\/li><li>Ajoutez un \u00e0 un les \u0153ufs, en travaillant \u00e9nergiquement la p\u00e2te \u00e0 chaque fois.<\/li><li>D\u00e9posez le m\u00e9lange dans une poche \u00e0 douille (douille cannel\u00e9e) puis pochez un premier cercle (20 cm de diam\u00e8tre environ), pochez un second cercle juxtapos\u00e9 au premier. Enfin pochez un dernier cercle \u00e0 cheval sur les deux premiers. Renouvelez l\u2019op\u00e9ration pour le 2\u00e8me Paris-Brest.<\/li><li>D\u00e9posez quelques amandes effil\u00e9es sur le dessus, puis faites cuire dans le four pendant une vingtaine de minutes.\u00a0 Laissez le disque de p\u00e2te \u00e0 choux 5 minutes dans le four chaud \u00e9teint.<\/li><\/ul>\n\n\n\n<p>Pour la cr\u00e8me au fromage frais&nbsp;:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>D\u00e9coupez 250g de saumon \u00e9cossais Label Rouge en fine brunoise.<\/li><li>Conservez quelques brins d\u2019aneth pour la d\u00e9coration puis hachez finement le reste.<\/li><li>Dans un r\u00e9cipient m\u00e9langez le fromage frais, la brunoise de saumon \u00e9cossais Label Rouge, quelques baies roses concass\u00e9es et l\u2019aneth hach\u00e9e.<\/li><li>R\u00e9servez dans la poche \u00e0 douille (douille inox unie).<\/li><\/ul>\n\n\n\n<p>Pour le saumon marin\u00e9&nbsp;:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>D\u00e9coupez la seconde partie du saumon en cubes plus gros. M\u00e9langez la sauce ponzu ainsi que le jus de citron et le saumon, r\u00e9servez au frais pendant 30 minutes.\u00a0<\/li><\/ul>\n\n\n\n<p>Pour la cr\u00e8me d\u2019avocat&nbsp;:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>D\u00e9coupez les avocats en cubes, ciselez finement les \u00e9chalotes, puis d\u00e9posez le tout dans un blender.\u00a0<\/li><li>Ajoutez le filet d\u2019huile d\u2019olive, le sel, le poivre, le jus d\u2019un citron jaune puis mixez jusqu&rsquo;\u00e0 l\u2019obtention d\u2019un m\u00e9lange lisse et homog\u00e8ne.
