Mixez trois tranches avec la chapelure et le beurre. \u00c9talez entre deux papiers sulfuris\u00e9s 3mm d\u2019\u00e9paisseur et d\u00e9posez au cong\u00e9lateur. Gardez une tranche de Bayonne pour la d\u00e9coration.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Basquaise<\/li>\n<\/ul>\n\n\n\n<p>Emincez l&rsquo;oignon. Lavez, \u00e9p\u00e9pinez et taillez en lamelles les poivrons (gardez-en un de chaque couleur). Saisissez \u00e0 l\u2019huile d\u2019olive l\u2019oignon, l\u2019ail et les poivrons en lamelles, puis baissez le feu. Mouillez avec 60 ml d\u2019eau. Faites cuire \u00e0 feu doux puis mixez au blender. Le coulis basquaise est pr\u00eat.&nbsp;<\/p>\n\n\n\n<p>Taillez les deux poivrons restants en tr\u00e8s fines lamelles, saisissez-les \u00e0 l\u2019huile d\u2019olive, gardez-les fermes.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Saumon<\/li>\n<\/ul>\n\n\n\n<p>Taillez le pav\u00e9 en deux , et roulez-le dans du film alimentaire pour en faire une ballottine. Faites-le cuire dans un casserole d\u2019eau fr\u00e9missante pendant 8 minutes. Une fois sorti, \u00f4tez-le du film et mettez-le sur une plaque. Taillez des rectangles \u00e0 la taille du saumon. Posez dessus puis flashez au four 2 minutes \u00e0 200 degr\u00e9s.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Dressage<\/li>\n<\/ul>\n\n\n\n<p>Mettez deux cuill\u00e8res de coulis basquaise dans une assiette. Posez une casserole dessus puis retirez-la pour faire un cercle fa\u00e7on arbre. Disposez les poivrons sur l\u2019assiette. D\u00e9posez le saumon en cro\u00fbte.
